As mentioned at the March meeting, this document includes extensive information on traditional British malting, fermentation, brewing, distilling, winemaking, cider and meadmaking. Note that microbiology had not yet been discovered and despite significant scientific study, the authors do not know what yeast is or how it works.
Also contains an interesting section on artificial refrigeration before modern phase-change appliances.
Additional chapters provide content on glass making, cheese and butter making.
